🍲 How to Make Ugwu
✅ Ingredients
- Fresh ugwu (pumpkin) leaves
- Onion (optional)
- Ground crayfish (optional)
- Salt to taste
- Palm oil or vegetable oil
- Seasoning cube
- Meat, fish, or other protein (optional)
👩🍳 Preparation Method
- Wash the ugwu leaves thoroughly with clean water to remove sand and dirt.
- Cut the leaves into small or medium-sized pieces.
- Place a pot on medium heat and add a small amount of oil.
- Add chopped onions and fry lightly if you are using them.
- Add your cooked meat or fish if desired.
- Add the ugwu leaves into the pot and stir gently.
- Add crayfish, seasoning cube, and salt to taste.
- Cover the pot and allow the vegetable to cook for about 3–5 minutes (do not overcook to preserve nutrients).
- Stir again and remove from heat.
WITH ANY SOUP OF YOUR CHOICE
- Wash the Ugwu leaves thoroughly with clean water to remove dirt.
- Pick the leaves from the stem.
- Cut or slice the leaves into small pieces then rinse again.
- Add the Ugwu leaf towards the end of cooking your soup or stew.
- Stir gently and allow it to cook for 1–2 minutes only to keep the aroma fresh.
👉 Do not overcook Ugwu leaf because it can reduce its flavour and fragrance.
