🍲 How to Make Ugwu


✅ Ingredients

  • Fresh ugwu (pumpkin) leaves
  • Onion (optional)
  • Ground crayfish (optional)
  • Salt to taste
  • Palm oil or vegetable oil
  • Seasoning cube
  • Meat, fish, or other protein (optional)

 

👩‍🍳 Preparation Method

 

  1. Wash the ugwu leaves thoroughly with clean water to remove sand and dirt.
  2. Cut the leaves into small or medium-sized pieces.
  3. Place a pot on medium heat and add a small amount of oil.
  4. Add chopped onions and fry lightly if you are using them.
  5. Add your cooked meat or fish if desired.
  6. Add the ugwu leaves into the pot and stir gently.
  7. Add crayfish, seasoning cube, and salt to taste.
  8. Cover the pot and allow the vegetable to cook for about 3–5 minutes (do not overcook to preserve nutrients).
  9. Stir again and remove from heat.

 

 

WITH ANY SOUP OF YOUR CHOICE

 

  1. Wash the Ugwu leaves thoroughly with clean water to remove dirt.
  2. Pick the leaves from the stem.
  3. Cut or slice the leaves into small pieces then rinse again.
  4. Add the Ugwu leaf towards the end of cooking your soup or stew.
  5. Stir gently and allow it to cook for 1–2 minutes only to keep the aroma fresh.

 

👉 Do not overcook Ugwu leaf because it can reduce its flavour and fragrance.
